My girl Kiley loves loves loves pumpkin spice & Fall (she calls it hoodie season). So in honor of her favorite season we came up with this fun and easy snack recipe. She wanted something that she could grab on the run to school, training and baseball practice that would give her a boost of energy and be something healthy. These delicious bites are filled with ground oats, pumpkin puree, peanut butter, vanilla protein and spices, these protein bites are the perfect treat for fall!
Ingredients
1/4 cup pure pumpkin puree
1/4 cup protein powder
1/4 cup honey
1/2 cup Skippy Natural Cream Peanut Butter
3/4 cups old-fashioned oats (ground in food processor)
1 tablespoon chia seeds
1/2 teaspoon ground cinnamon
2 teaspoons pumpkin pie spice
Directions
1. In a large bowl, combine the pumpkin, honey, and peanut butter.
2. Add in oats, chia seeds, cinnamon, and pumpkin pie spice. Stir well.
3. Using a small spoon or scoop, roll into balls.
4. Refrigerate for 15-30 minutes, or until firm. Store in refrigerator in a sealed container.
