Black Bean & Shrimp Lettuce Wraps. If you’re all about a quick and delicious lunch or dinner, these lettuce wraps are quite satisfying. Made with light and healthy shrimp, these zesty lettuce wraps are even great for a party appetizer. Plus, they’re easy as can be which makes them even better!
32 oz cooked, peeled and deveined jumbo shrimp
1 large carrot, peeled and shaved with vegetable peeler or grated
1 large yellow bell pepper, finely chopped
2 15 oz rinsed and drained canned black beans
1 bunch fresh cilantro leaves (chopped)
grated lime rinds from 3 limes
1/4 cup fresh lime juice
3 tablespoon extra virgin olive oil or avocado oil
1 teaspoon ground cumin
1/2 teaspoon garlic powder
Salt to taste
12 to 24 large butter lettuce leaves, rinsed and patted dry
** Serve with lime wedges & favorite hot sauce
Combine all ingredients except lettuce in a medium bowl. (Mixture may be chilled until ready to serve)
Spoon about 1/3 cup shrimp salad into each lettuce leaf. Serve immediately.
If lettuce leaves are small, stack two together before filling.
