Looking for an easy lunch to make during the week! Look no further! These Chicken Salad Lettuce Wraps are my favorite quick & healthy lunch! Made with canned chicken, olive oil mayo, grapes, celery and walnuts wrapped up on your favorite lettuce leaf. These wraps are super healthy and totally delicious!
Ingredients
1 large can of chicken
1/2 cup halved grapes
1/3 cup diced celery
1/4 cup diced red onion
1/4 cup chopped walnuts or pecans
2 tablespoons chopped fresh basil (or 1 teaspoon dried basil)
1/3 cup olive or avocado oil mayonnaise
2 tablespoons fresh lemon juice
Lettuce Leaves (Green Leaf, Butter Leaf or Romaine)
Sea salt and black pepper to taste
Directions
In a bowl, mix together all of the ingredients until well combined.
Serve on lettuce leaf (I use 2 leafs for my wraps).
