Low Carb Tortilla Personal Pizza

Here’s a great and fun recipe to include your family in the kitchen for family meal prep. Pizza is my whole family’s favorite so I say why not play it up and have a ton fun while making dinner, while keeping it low carb for me.

Ingredients

Low Carb Tortillas (I use the Mission Carb Balance ones, either the regular flour or spinach)

Olive Oil

Rao Brand Pizza Sauce

Shredded Mozzarella

Italian Seasoning

Whatever you want for Toppings (Be Creative): The one I made for this picture is pepperoni, red onions and black olives

Directions

Preheat oven to 375°

Place tortillas on a sheet pan

Brush each tortilla lightly with olive oil

With a spoon put about 2 tablespoons of pizza sauce and spread around the tortilla. If you use too much the tortilla won’t crisp up and it will be soggy

Sprinkle a little cheese, then a little Italian seasoning, then toppings, a little more cheese and little sprinkle of Italian seasoning (optional).

Place in oven on middle rack and cook 16-17 mins or until done. Cheese and edges of should be lightly browned and tortilla crispy. It will crisp up some as it cools.
