Doritos Taco Salad with Homemade Catalina Dressing

I love retro recipes and this one is definitely one of my favorite blasts from the past! If you’re a child of the 80’s, then you’ve probably enjoyed this Doritos Taco Salad at a potluck or family gathering. It’s an easy dinner recipe and a crowd-pleasing party food that will have them begging for the recipe. The secret for mine is in the homemade Catalina dressing.

Ingredients

For the Salad

  • Romain lettuce
  • Roma tomatoes
  • Fresh corn on the cob. Charring the corn on the stove before you cut the corn really brings out a wonderful smoky flavor
  • Green onions
  • Black olives
  • Avacados
  • Shredded Cheese
  • Crushed Nacho Cheese Doritos

For the Taco Meat

  • 1 LB Ground beef -browned in a skillet
  • 3-4 Tablespoons of my Taco Seasoning
  • Add a little water is meat is too dry after adding mix

For My Taco Seasoning

1/4 cup sweet paprika
2 tablespoons chili powder
2 tablespoons dried oregano
1 tablespoon cornstarch
1 tablespoon kosher salt
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon granulated sugar
1 teaspoon ground coriander
1 teaspoon freshly ground black pepper

Optional
For a little hotter add 1 teaspoon cayenne pepper


For Catalina Dressing

1 large clove garlic
2/3 cup canola oil
1/2 cup all-natural ketchup
1/4 cup white vinegar
1/4 cup apple cider vinegar
1/4 cup honey (more or less, to taste)
1 tablespoon tomato paste
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt (plus additional to taste)
Freshly ground black pepper (to taste)

Directions for the Dressing

Mince the garlic, place all of the ingredients in a large jar with a tight-fitting lid, and shake vigorously until well-combined.
