Big Mac Salad – Low Carb

When you are trying to eat healthier, but crave a Big Mac. This is all the flavor and deliciousness of a Big Mac without the guilt. Hubby loved it and my kids are sold on it and even asked me to make again tomorrow.

Ingredients

2 lbs ground beef
1 tsp sea salt
1 tsp ground black pepper
2 Tbsp olive oil
4 cloves minced garlic
1 tbsp onion powder
2 cup cheddar cheese, shredded
Dill pickles, sliced
1 cup minced onion
1 head Iceberg lettuce
Sesame seeds

Big Mac Sauce Ingredients

1 cup mayo
4 Tbsp pickle relish (or chopped pickle with juice)
2 Tbsp no sugar added ketchup
1 tsp yellow mustard
1/2 tsp monk fruit sweetener (increase if swapping chopped pickle for the relish)
1 tsp garlic salt
1 tsp onion powder

Directions

Over medium-high heat, add 1 Tbsp of olive oil to the pan. Add the ground beef, salt, pepper, and garlic clove. Stir and cook the ground beef until it’s no longer pink in the middle. Drain the grease. Set aside.

Prep The Salad IngredientsPrepare the remaining salad ingredients by slicing the pickles, mincing the onion, shredding the cheese, and chopping the iceberg lettuce. Set aside.

Make The Big Mac Sauce in a small bowl – mayo, pickle relish, ketchup, yellow mustard, sweetener, garlic salt, and onion powder, mix well.

Lay the lettuce in the bottom of 4 bowls. If you’re a hearty eater, this recipe might just be 2 servings.

Sprinkle the burger meat on top of the lettuce. Then add the pickles, onion, and shredded cheese.

Spoon drizzle the Big Mac sauce over the salad or serve the dressing on the side. Top with sesame seeds. Enjoy!
