Shrimp Fajitas

Shrimp Fajitas 🍤🫑🧅🌮 are simple and amazing. My family is giving me major high fives for this winning dinner. Bonus points to mom for making the house smell delicious too…had them drooling before the dinner was done cooking.


Taco Seasoning

4 tablespoons of chili powder
1 teaspoon red pepper flakes
¼ teaspoon cayenne pepper
1 teaspoon oregano
2 teaspoons smoked paprika
2 tablespoons ground cumin
2 teaspoon garlic powder
2 teaspoon onion powder
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper

Shrimp Fajitas

1 ½ lbs Raw Shrimp deveined peeled with tails off
2 Bell Peppers sliced
1 Large Red Onion sliced
3 Large Jalapeños sliced
2 tbsp Olive Oil
2 tbsp Taco Seasonings
Your favorite flour tortillas


For the Taco Seasoning

In a small bowl, stir together all of the spices. Store the seasoning mix in an airtight container. I keep mine in a glass mason jar in my spice cabinet.

For the Fajitas

Preheat oven to 450°

Line a baking sheet with parchment paper

Put shrimp, bell peppers and onions into a large bowl

Add seasoning and avacado oil and toss well until evenly coated

Put shrimp, peppers and onions on sheet pan spreading out as a single layer

Bake for 8 mins, then switch to Broil for 3 mins

Serve with toppings like guacamole & salsa & enjoy
