Caprese Salad with Cannelloni Beans

If you love Caprese Salad, you will love this version that includes cannelloni beans. The beans add an additional richness without taking away from that flavors of the tomatoes, basil & mozzarella. The different texture of the beans also make it a great compliment to grilled or smoked beef, pork or chicken dish.


1 (14-ounce) can Cannellini Beans, rinsed
5 oz Grape tomatoes, halved
5 oz Ciliegine (small mozzarella balls)
1/4 cup loosely packed basil leaves, cut julienne strips
2 tablespoons olive oil, plus more as needed
2 teaspoons good-quality balsamic vinegar, plus more as needed
Flaky garlic salt to taste


In a medium bowl, combine the beans, tomatoes, cheese and half the basil. Gently toss together.

Add the olive oil and season the mixture well with garlic salt. Gently stir to combine.

Drizzle the salad with the balsamic vinegar and top with the remaining basil. Taste and adjust seasonings to your liking. Add a drizzle or so more of oil and vinegar if needed.
