Flax Seed & Bran Muffin with Applesauce

These happy little Flax Seed & Bran Muffin with Applesauce are packed with whole grains, and vitamins. And all without added sugars! They’re a perfect healthy snack or breakfast for the family to make ahead and serve throughout the week.

Ingredients

1 cup golden monk fruit
1 cup unsweetened apple sauce
1 cup avocado oil
2 large eggs
2 tsp vanilla extract
1½ tsp salt
2 cup whole wheat flour
2 cup natural wheat bran
6 tbsp ground flaxseed
2 tsp baking soda
1 tsp baking powder
1/2 cup half & half
1/2 cup unsweetened almond milk

  • If you can only find whole flax seeds, grind on high 1 cup at a time for 30 seconds or until you have a good consistency.

Directions

Preheat your oven to 400 degrees and prepare a 12-cup muffin pan by greasing with non-stick cooking spray or using a silicon muffin pan (which I prefer)

In a large bowl, whisk together golden monk fruit, applesauce, avocado oil, egg, vanilla, and salt until fully combined

In a separate bowl, mix together flour, wheat bran, flaxseed, baking soda, and baking powder

Slowly mix the dry ingredients into the wet ingredients until barely combined

Mix in the half & half and almond milk until fully combined

Pour the batter evenly into the 12 muffin cups, I used an Ice cream scoop to make sure I had even amounts.

Bake for 11-13 minutes.

To test doneness, insert a toothpick into the center of a muffin, and if it comes out clean, they are done.
