Oven Baked Egg Bites

Oven Baked Egg Bites. healthy, wholesome and delicious breakfast egg bites with crispy bacon, cheese and eggs. Made in the oven, these baked egg bites are better than Starbucks! Change up the toppings and be creative.

Ingredients

2 large eggs
½ cup 1/2
1 cup gruyere, pepper Jack or cheddar cheese, grated
2 tbsp cooked bacon, crumbled (2-3 slices) (*Optional)
¼ tsp Smoked paprika
⅛ tsp Cayenne Pepper
¼ tsp Cumin
¼ tsp Garlic powder
¼ tsp Onion Powder
¼ Salt
¼ Ground Black Pepper

Directions

Preheat oven to 275°F.

Cook your bacon in the oven or in a skillet until crispy. Crumble into bits and set aside.

Add all ingredients (except bacon & cheese) to a blender and blend on low 1 minute, then High another min.

Use a silicon muffin pan, placed on a sheet pan, (if using tin muffin pan, brush melted butter generously inside each cup). (You can also use nonstick spray or liners to prevent them from sticking. If using liners, spray them as well.)

Using a mini ice cream scoop or small ladle, add the egg mixture to each muffin cup. Fill each cup almost to the brim then top with cheese and bacon.

Bake for 20-25 minutes on the MIDDLE rack. *Bake time may vary depending upon your oven and the size of your muffin cups! Try to keep from opening and closing the oven since this will drop the temperature. Make sure he middle isn’t jiggly.

As soon as you can handle them, GENTLY use a knife or small silicone spatula or butter knife to loosen the outside of each egg cup to allow your bites to slide out. Do not wait for them to cool or they will be tougher to remove.

Eat immediately or store in the fridge for 3-4 days in a sealed container.
